Organic certified Biodynamic 100% Chardonnay from their 2023 vintage, with a 31-day carbonic maceration in tank. Basket-pressed by hand, the majority of the juice goes to their straight Carbonnay cuvée, and the final draw from the press is aged in two glass carboys for 10 months |
