Organic certified Biodynamic A portion of the Pinot Meunier was whole-bunch pressed to fibreglass, with the remaining Pinot Meunier, Pinot Noir, Chardonnay, Bacchus and Pinot Gris added to the tank as whole bunches for a three-week infusion maceration. Macerated fruit was pressed off to old Burgundy barrels along with the Meunier juice (a small portion remained in fibreglass) and aged for 9 months before bottling in accordance with the biodynamic calendar, strictly no additions |
