Organic certified Biodynamic Biodynamic grapes from Ham Street were harvested by hand. Macerated in whole bunches for 40 days. Co-fermentation with indigenous yeast. Aged in a combination of old barrels and fibre glass tanks. Bottled with no filtration or fining. Small amount of sulphur. |
