Like all amontillado sherries, this begins life as a manzanilla and ages for eight years under a film of yeast known as flor. After this, it spends a further seven years maturing with exposure to oxygen.
Fresh, lemon & sea salt nose with almonds, walnuts and toasted oak. The taste is similarly salty, dry, nutty and zesty with some subtle toffee and light herbal notes.
Barbadillo has been making sherry since 1827. The solera system in which this Amontillado is aged has 12,667 sherry butts.
