Pet Nat Organic Whole bunches were gently pressed over 7 hours, and co-fermented with indigenous yeasts in stainless steel. After a long, slow fermentation, the wine was bottled via gravity with no fining, filtration, or additions of sulphur. Not disgorged, 565 bottles made. |
